And for the recent episode—which was aired on January 15th—the well-known chef chose to make Malaysian-style sea bass (aka ‘’Ikan Siakap’’). While his co-host Doherty chose to prepare cheese and pepper quesadillas. The video has since garnered over more than 945,148 views.
For the paste, Jamie Oliver explained that he preferred to use lemongrass, red chillies, shallot, ginger, kaffir lime leaves and salt which he crushes with pestle and mortar, adding peanuts halfway through. Hmm, quite similar to the way Malaysian does it. He also adds fish oil, tomato puree and lime juice into the mix before slathering it onto the fish. Covering the prepared fish with banana leaf, he bakes it in the oven for a period of time.

The video ends with him enjoying the fish with rice, as well as salad and chili pickle, saying, “Normally, I would use knife and fork for this, but today I am going to use my very clean hands.” Which of course, many viewers agreed in the comment section that eating with hand is the Malaysian and Asian way. Yass, Jamie! Here’s to more Malaysian and Asian dishes to be featured on your channel!
